In Old Manali, Kasol and across the Parvati Valley, riverside cafés with wooden terraces, floor cushions, wood fires and mountain views serve a surprisingly global menu — Israeli, Italian, Tibetan and hearty local fare — to a laid-back crowd of travellers.
